I have been wanting to try some chili noodles forever but couldn’t find a recipe that sounded like what I was looking for so I decided to just combine a few and make up my own.
I hit Wegmans and got some sushi to have with it and also as a fall back in case my noodles didn’t turn out.
So the first thing I did was prep the tofu. You want to get the moisture out of the tofu before you cook it so to do this I cut it into strips and then press it with paper towels. Then I cubed it.
You really can add any veggies you want, or even just make the noodles plain and skip the veggies and tofu. I added one head of chopped broccoli (next time I will do more) and two green onion stalks. We decided next time we will try adding shaved carrots as well. If you don’t want to keep it Vegetarian you could add some cooked chicken.
RECIPE
Saute the oil and garlic and then add the tofu veggies and soy sauce. In the meantime start a pot of boiling water and cook the rice noodles. Combine once both are cooked. Next make the oil to cover the noodles and veggies.
Heat the oil and then add the chili oil, garlic, soy sauce and then the onions last. Pour over the noodles and veggie tofu mix.
I really liked it, the sesame oil is one of those that creep up on you so adjust depending on your level of spicy love. You could also easily make your own with a tbsp of crushed red pepper flakes and 3 tbsp of avocado oil and 1/4 tsp Chinese 5 spice (I didn’t have any so went with the sesame oil).
Will for sure be making it again, might try adding some bean sprouts next time! This recipe is super fun to experiment with. Enjoy!
