I broke my card reader so while I am still doing my 365 it will be a day or two before I can upload my pics- waiting on my new card reader from Amazon.
One of our winter staples around here is Cheddar Cheese chowder. The other night I made it and threw in extra veggies- couldn’t even taste them. It’s just so good.
The original recipe is this- but I usually skip the onions and add way more carrots, peppers and potatoes.
3 cups chicken stock
4 medium potatoes, peeled and diced
1 med onion
1 cup thinly sliced carrots
1/2 cup diced green pepper
1/3 cup butter
1/3 cup flour
3 1/2 cups milk
4 cups shredded cheddar cheese
1/4 teaspoon hot sauce
Add veggies to chicken stock and bring to a boil, cover and simmer.
Melt butter in a heavy saucepan, blend in flour, and cook one minute
Gradually add milk, cover over medium heat until thickening, stirring constantly. And cheese, stirring until melted.
Stir into veggie mixture and cook over low heat.
It ends up looking like this- although this recipe is slightly different (has bacon!) May have to give it a try next time instead!

This looks yummy! I used to get a cheddar/veggie soup at this cute bistro on my lunch before I was married and a mom. I think of that soup all the time, and this looks just like it…only no potatoes.
