The BEST Taco Tuesday Chicken Tacos

Make these tonight, thank me later

First you need to start with this amazing crockpot chicken. Throw it in your crockpot in the morning and it will be read to go by dinner. It is so amazing on tacos, nachos, or by itself.

I posted the recipe a while back on the blog. But now I am even more simples with it and just throw a jar of good salsa in the crockpot with the chicken.

I prep all the topping in advanced and put them in the fridge. For us I usually use shredded romaine lettuce, shredded fresh pepper jack cheese, avocado, and tomatoes if I have them.

The thing that takes these up a level is making the taco shells from scratch and it is way easier than you think. You just need a pack of yellow corn tortillas and some oil.

1. Using high heat cooking oil (avocado, canola or vegetable oil) pour about 1/2 inch into a dutch oven

2. Heat the oil to 350°F-375°F This is a good thermometer if you want to check the tempature

3. Using metal tongs, place one corn tortillas at a time in the heated oil and cook for about 15 seconds.

4. Using the tongs, fold the tortilla in half and flip it over, cooking for another 10-15 seconds until it appears golden brown. Try to keep the folded shell open to avoid it frying in a closed position.

5. Remove from the skillet and place over paper towels.

We are obsessed with these taco holders and use these while the tacos cool. Plus they are cute!

Plate it up and enjoy! Happy Tuesday!
