Cheddar Cheese Chowder

When you need a little comfort food.

I have posted this recipe before but it was many years ago and I have tweaked it a bit since then. We always wait until the temps dip for the first batch of the season.

I make it in this big pot that I LOVE. I use it for everything!

Serve it with some warm crusty bread. Enjoy!

3 cups chicken stock
4 medium potatoes, peeled and diced
1 cup thinly sliced carrots

2 cups chopped broccoli heads
1/2 cup diced green pepper, yellow pepper, or orange pepper
1/3 cup butter
1/3 cup flour
3 1/2 cups milk
4 cups shredded cheddar cheese
1/4 teaspoon hot sauce

Add veggies to chicken stock and bring to a boil, cover and simmer.

Melt butter in a heavy dutch oven, blend in flour, and cook one minute

Gradually add milk, cover over medium heat until thickening, stirring constantly. And cheese, stirring until melted.

Stir into veggie mixture and cook over low heat. Let sit to thicken. Top with hot sauce.
