Mini egg and cottage cheese tortillas

It was one of those mornings where we just looked in the fridge and couldn’t figure out what to have for breakfast. Nothing sounded good. Cottage cheese is all the rage right now which is really cool for me as I have been eating it forever so to see it being used in so many different ways makes me happy.

We grabbed what had and mixed it all up and what is great about this recipe is that you can really add whatever veggies you have on hand. This is what we used and it was SO good!!!! The mini size makes them easy to freeze or save some for later. You just need a jumbo muffin baking pan.

  • Tortillas: Mini taco size
  • Eggs:  3 large eggs
  • Cottage cheese: 1/3 cup
  • Veggies: I used tomatoes from our garden, spinach, and red pepper
  • Cheese: 1/3 cup cheddar but pepper jack would be great too
  • Salt and pepper and any other of your fave seasonings- I like to add hot sauce on top after they bake

Mix it all up except for the cheese. Put a tortilla in each muffin slot and add the mixture. Top with cheese. Bake at 425 for about 20 minutes. Super easy, super good. You can thank me later.
