Garlic Mozzarella Pasta Casserole

Always looking to find a new take on items that I always have around the house. Found this one on Pinterest by amummytoo and tweaked it a bit based on what I had on hand. Being butter based instead of olive oil based made it much richer and SO good.

INGREDIENTS

  • 14 oz Pasta
  • 2 tbsp butter 
  • One cup chopped tomatoes
  • 2 cloves garlic minced
  • fresh spinach (I always just use what I have, it shrinks)
  • sprinkle of red pepper flakes
  • fresh mozzarella balls or tear up a loaf
  • 1/2 cup grated cheddar cheese 
  • salt and black pepper to taste
  • 4 tbs fresh breadcrumbs
  • ⅓ cup Parmesan
  • Olive oil if dry

Boil Pasta and set aside. Heat butter, tomatoes, chili flakes, garlic, salt and pepper until soft. Add spinach and then cheddar and mozzarella and pasta.

Dump into a greased baking dish and cover with breadcrumbs and parmesan. Bake at 350 until lightly browned.
