Caprese Pasta

Ingredients

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 4 tablespoons  balsamic vinegar
  • 1/2 cup pesto 
  • 1 pint cherry tomatoes , quartered
  • 1/2 cup chopped fresh basil
  • 8 oz fresh mozzarella
  • Salt and pepper 

Instructions

  • In a large pot, cook pasta according to package directions until al dente.
  • Pour pasta into a large bowl. Add olive oil, balsamic vinegar, and pesto. Toss to combine.
  • Add tomatoes, basil, and mozzarella. Stir to combine. Season with salt and pepper
  • Serve immediately or refrigerate until ready to serve.
