When I was in college my roomates and I would splurge every now and then and actually cook a big meal. One of our favorites was Green Chili Enchiladas. I have modified them over the years and this is where I landed.
Ingredients
- 1 large chicken breast
- 8 whole wheat tortillas
- 1 small finely chopped onion
- 2 cups shredded Jack cheese
- 2 cans green chilis
- 8 0z block cream cheese
- 1 jar of verde salsa (I use Trader Joes)
- 3/4 stick of butter
Instructions
- Cook the chicken (grill or bake in the oven) and then shred
- Finely dice the onion and saute in butter
- Add green chilis once onions are translucent
- Line the bottom of casserole dish with green salsa
- Mix together the chicken, cream cheese, 1 cup of Jack cheese with the onions and chilis. Add salt and pepper
- Roll mixture into tortillas and top with remaining verde salsa and top with remaining cheese.
- Bake at 350 until golden brown, usually 20 minutes.
