Spinach Three-Cheese Baked Ziti

A busy night of play practice and lacrosse practice but I wanted something a little more than basic pasta. This was so easy to throw together. I ended up having to do two batches because I had to cook it in our toaster oven. Planning to freeze the extra one so it all worked out fine.

1 package (1 pound) uncooked medium tube-shaped pasta (ziti)
1 bag (6 ounces) baby spinach, washed (about 4 cups)
1 jar (24 ounces) Prego® Three Cheese Italian Sauce or Prego® Four Cheese Italian Sauce
1 cup reduced fat (part skim) ricotta cheese
1 cup shredded mozzarella cheese (about 4 ounces)
3/4 cup grated Parmesan cheese
1 small clove garlic, minced
1/4 teaspoon ground black pepper

Step 1
Heat the oven to 350°F. Prepare the ziti according to the package directions in a 6-quart saucepot. Add the spinach during the last minute of the cooking time. Drain the ziti and spinach well in a colander. Return them to the saucepot.

Step 2
Add the sauce, ricotta cheese, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, the garlic and black pepper to the ziti mixture and stir to coat. Spoon into a 13x9x2-inch baking dish. Sprinkle with the remaining 1/2 cup mozzarella and 1/4 cup Parmesan cheeses.

Step 3
Bake for 30 minutes or until hot and bubbling.
